How do you make mint tea from your own spearmint? I've been compelled to plant about 10 different kinds of mint in the garden this year, but I don't know what to do with them.

(I know I can google, but I'd love to hear how you do it, since you're such a gourmet :))

Seriously? Same way you make any sort of herbal infusion: steep the leaves in boiling water. I like my tea strong, so I use at least two or three sprigs per serving and steep for 4-6 minutes. (If you like it stronger, don't steep longer; add more mint.) And don't use the stems--it will make the tea bitter.

If you grow verbena as well (and if you like herbal infusions then you should), a few leaves add a nice touch.

Actually thank you (and to caprinus for raising the query!) I've never had the nerve to pluck mint from the backyard and the steeping timing (as opposed to use more leaves) for strength was something that mystified. I think I saw some daredevil pastry maker fearlessly infuse mint into cream destined for ganache...the visuals on proportion escaped me....

You can't imagine how bizarre it is for me to read this. But I've been having fresh mint tea since I was eleven or so.

I'll have to check on the time for infusing cream. I think you might use a lower temp and leave it in longer.

Well, I think experimentation is in order and I shall record adventures in "herbology" as go through them. I've worked with dried mint leaves, only a few times with fresh leaves - or I don't recall it going well enough such that I repeated it... I've used fresh mint leaves for other things - just not tea brewing.

Tonight, I pulled off a bit of a work-a-day coffee cake so as to take it over to my brother's for Father''s day. The real Molly's AlphaHumanMom is making cherry pie from the cherries they picked in the back yard late yesterday morning for dessert. So the garden is off to a flying start and crazy mint plant has just met its match, or will when I start snatching its leaves for tea [insert evil laugh.....can't decide if I am a muwhahaha type or a bwuhahahah type - I don't have the baritone to pull it off either way really.]
