Some of you may remember Chef Jeff from the Thai-run sushi bar around the corner from my old place. It sounds like everyone else he used to work with there has moved on. Even Víctor the Ecuadorean busboy, who was as much a fixture at the place for me as the maneki-neko, has gone back home to Quito, to be replaced by a FOB from Putumayo who speaks no English.

"We're teaching him Thai," Jeff told me, "It's easier for us."

I told him he just came up with the punchline of one of the oldest Jewish jokes. Julián even has a Thai name: They call him O:liáng, which (although derived from Chinese 烏龍 wūlóng "oolong") means "Thai ice coffee".
