I prefer "bialys" as the plural, as do google (714 hits to 159) and Joan Nathan's Jewish Cooking in America. Not sure why, nor can I think of any other plurals in "ys" offhand with which to test any theories.
(Nathan gives an etymology from Bialystok, in Poland, but notes that it's similar to a pletzel and almost identical to a Georgian bread.)
