Here's your handy guide to commercial SpƤtzle varieties (as produced by ALB-GOLD Teigwaren GmbH at their Bechtle factory in Trochtelfingen).

I've mostly only had the "geschabte" ("grated") variety before. The "LandspƤtzle" are more rounded; I think they're formed using a press.
