Baking

The apple cake looked so damn good in the oven that I told [livejournal.com profile] monshu he'd have to take it out, because I was afraid if I did it I'd spooge all over it. Now it's cooling on the range and it looks EVEN BETTER. 2-3 hours before we can eat it, however. By that time I should be back from my realtor's cocktail party and in just the mood for a bit of sweet.

When I put the cake in, it was as dark as night--darker on the back porch because the lights are on a timer and hadn't come on yet. The Old Man had just made it back from the Evanston Art Fair, so I said, "Let it pour." And it did--sorry, Lollapalosers, the garden needed it and I wasn't about to get the fucking hose out again.

It's in the most recent issue of Cooks Illustrated (thanks again, [livejournal.com profile] bunj!). I don't think I could reproduce it here without being hunted down by mallet-wielding Vermonters who would explain to me the science behind how their blows were breaking down the protein strands in my flesh while beating me to a pulp.
