(no subject)

I forgot to mention that one of the few house specialties at Los Comales in a menu heavy with norteño standbys was "sujugo". As in "carnes en sujugo". Sadly, this was sold by the gallon, much like carnitas, and I wasn't sufficiently intrigued to talk anyone with me into sharing some.
